This lot hails from the high-altitude Huila-coffee growing region of Colombia and is made up of Castillo, Caturra, and Colombia varietals. Coffee cherries are harvested, fermented, washed, and beans are run through sugarcane decaffeination immersions. This seals in the decadent flavors of this special lot and gives the beans their glossy shine.
Baristas who brew this coffee always liken the first aromatic to toasted marshmallows. This quickly melts into flavors of graham crackers and chocolate creme patissiere.
